A memory limit of 256M is usually plenty to update a Joomla site. You have 512+ so something else must be gobbling memory. Do you have a pre-update backup enabled (I am not an Akeeba user so don't know if it could be responsible). Disable logging in Global Configuration? Disable 3rd party plugins before upgrading?
